SOUTHFIELD, MICHIGAN (WXYZ) – Thanksgiving is less than a week away and many people still haven’t finalized their menu yet.
If you’re one of them don’t worry. Chef Anthony Calabrese from Cantoro Italian Market is sharing his recipe for a stuffing with a twist to make your dinner unique. It’s posted below. Enjoy!
Cantoro Italian Market’s Italian Sausage and chestnut Stuffing
1 loaf of Cantoro Italian bread diced, set aside.
Cantoro house made ground Italian sausage 2lbs
2 large onions, diced small
6 carrots, diced small
6 stalks celery, diced small
4 pts of your favorite mushroom, chopped
1/2 minced fresh garlic
2 tbls chop fresh thyme
1/3 chopped fresh sage
Salt and pepper to taste
Cook all above ingredients breaking down the ground sausage with all the vegetables and seasoning, cooking well thru making a nice ground cooked mixture. Set aside.
Score chestnuts and roast at 425 degrees for 12-16 min peel and chop into smaller peace’s.
Custard
2 cups, Heavy Cream
4 Whole Eggs
4 Egg yolks
Nutmeg, 1 whole grated
Whisk all ingredients throughly till well incorporated.
In a large mixing bowl mix diced bread, chestnuts and sausage mixture, mix well, then add custard and mix well. Put stuffing in buttered baking dish, bake in a water bath at 325 degrees until a tooth pick comes out clean.
