Summer Cheese Dips

Summer is all about entertaining. In that spirit, Colleen Elliott, our resident cheese aficionado, shares two cheese dip recipes perfect for any event.

Cantoro’s Garlic Feta Dip

1 ½ cup          Cream Cheese (softened)

1 cup                Sour Cream

1 Tbsp.            Lemon Juice

½ tsp.             Lemon Zest

¼ tsp.             Salt

¼ tsp.             Pepper

1 ½ tsp.          Granulated Garlic

1 ½ tsp.          Fresh Garlic, minced

  • Mix above ingredients until well combined.
  • Add:

1 Tbsp.            Fresh Parsley, minced

1 Tbsp.            Fresh Chives, sliced thin

½ tsp.             Fresh Dill, minced

½ tsp.             Fresh Oregano, minced

½ tsp.             Fresh Thyme, minced

  • Then add two cups of crumbled feta. Chill before serving.

 

Cantoro’s Blue Cheese Dip

2 cups             Mayonnaise

2 cups             Sour Cream

4 Tbsp.           Lemon Juice

4 Tbsp.           Red Wine Vinegar

½ tsp.             Salt

¼ tsp.             Pepper

1 Tbsp.            Granulated Garlic

2 Tbsp.            Dried Parsley

1 Tbsp.            Dried Chives

  • Mix all ingredients
  • Add 32 oz. crumbled blue cheese (suggestion: use 20 oz. crumbled blue or gorgonzola by Stella and get creative with the remaining 12 oz. such as Point Reyes Blue from California)
  • Chill before serving
