Memorial Day Grilling With Cantoro!

This Memorial Day Weekend kick off summer with a saucy BBQ feast! Cantoro’s Chef Francisco provided a great recipe!  

“It’s the perfect BBQ sauce that you can slather on anything from ribs to chicken to salmon before throwing it on the grill,” he said. You can even add another level of flavor to this recipe by adding pureed fruit like peaches, mangos or figs. Want to make it a little sweeter? Try adding honey – natures sugar.  

To drink, Cantoro Trattoria General Manager and Sommelier Alex recommends brown ale’s to go with this BBQ sauce Or, for wine, try Brunello or Amarone. For the kids, go for Italian sodas at Cantoro!

BBQ Sauce Recipe from Chef Francisco

  • ½ small onionMemorial Day Grilling With Cantoro!
  • 3 cloves garlic minced
  • 1 ½ cups brown sugar
  • 1 ½ cups ketchup
  • ½ cup red wine vinegar
  • ½ cup water
  • Tbl. Worcestershire sauce
  • Tbl. Dijon mustard
  • 2 Tsp. Smoked paprika
  • 2 Tsp. Cholula hot sauce 

Sauté onion and garlic until caramelized. Add brown sugar, red wine vinegar, water, Worcestershire sauce, Dijon mustard, smoked paprika and hot sauce. Bring to a boil and then turn down to a simmer and cook until the sauce is reduced by about half. Add ketchup and bring back to a boil and simmer until desired consistency. Adjust seasoning with salt and pepper.
